Description: The elderly inhabitants of Álora know the place as Posada de Subires, the last name of the last owner, who ran an inn here during the first half of the twentieth century. The name of the mill actually comes from the first owner, the Bachiller (the Graduate) Gonzalo Pérez, a very influential person in Álora in the sixteenth century, from when this olive oil mill also dates. The deposit is one of the elements, which make up the Mill.
